Our Traditional Blend earned its renown and reputation by using only the best locally sourced 100% pure maple sugar, and carefully hand-picked boreal herbs from our pristine Canadian forests. The maple tastes in this blend are the combination of two different maple sugar granulations that are perfectly balanced to deliver unique and absolutely divine flavors. When cooking, the finely ground, highly soluble maple sugar melts as soon as it comes into contact with food, while the more coarsely granulated maple sugar reacts to the heat to offer incomparable caramelization and taste. When used in meals that are not heated or cooked, the sugars provide a crunchy and pleasing texture – little gold nuggets that explode with subtle flavors that make us think of the maple sap that once again starts running in the spring. The naturally smoked walnut wood salt delicately enhances the effect of maple sugar through a process of osmosis, allowing the juices of the food to seep onto the surface, giving way to a delicate smoky flavor. When finished cooking, the heat continues to activate the Sweet Gale and Dune Pepper, the boreal herbs in our blend. Used for eons by the First Nations, the subtle peppery aromas of these herbs are created when their oils are released, giving off a sweet, slightly floral bitterness reminiscent of how boreal forests smell in the morning. We developed each of our blends, and the perfect ratio and balance within each blend, based on the teachings of the Elders of the various Indigenous communities who shared their unique knowledge, culture and cuisine with us.
